So many names and so much confusion!<\/p>\n\n

We read Marmalade, but some times Jam. Also complicating matters is the Extra definition.<\/p>\n\n

But when is it jam? When Jam? When Extra? More importantly, what are the nutritional properties of one and the other and what is worth buying?<\/p>\n\n

Let’s discover meanings together and hunt for quality natural products-the real ones!<\/p>\n\n

For the regulation of these products, we comply with Legislative Decree Feb. 20, 2004, no. 50, on the implementation of Directive 2001\/113\/EC relating to jams, jellies, marmalades and chestnut pur\u00e9e.<\/p>\n\n

The outline included in this article highlights, in a very simple way, some essential elements contained in the legislation. Specifically, we reported the minimum fruit percentage for each of these products. In addition, jam and marmalade differ in the fruits they contain.<\/p>\n\n

Marmalade<\/strong> is a mixture, brought to proper gelling, of sugars, water and pulp and\/or puree exclusively of citrus fruits.<\/p>\n\n

Jam<\/strong> is a mixture, brought to proper gelling, of sugars, water and pulp and\/or puree of a single species of fruit, or of two or more species of fruit.<\/p>\n\n

In addition to this, jam and marmalade can be considered “\n Extra<\/strong>\n<\/em>” if they contain at least 45 percent fruit (citrus in the case of jam).<\/p>\n\n

It is already clear from the minimum amount of fruit, how the definition “Extra” is a greater requirement of goodness and quality of the product!<\/p>\n\n

Another basic requirement is the origin of the fruit and the other ingredients in the extra jam and marmalade, in addition to the fruit.<\/p>\n\n

In high-quality jams and preserves:<\/p>\n\n

– the fruit<\/strong> used must be fresh, natural and unprocessed<\/strong>;<\/p>\n\n

– the amount of sugar<\/strong> should be limited;<\/p>\n\n

– pectin<\/strong> should not be present; <\/p>\n\n

– thickeners-if<\/strong> not natural, of plant origin-and additives<\/strong>, which are generally used for industrial products, should not be present.<\/p>\n\n

Extra homemade jams and marmalades: why choose Canalotto Farm<\/h2>\n\n

From what we have read above, we have already understood that it is best to buy the extra jams and marmalades. But this is not enough! It is necessary to have a look at the ingredients<\/strong>!<\/p>\n\n

For example, extra jams and marmalades without added pectin are preferred. These have a less dense and compact consistency. They are smoother and more delicate in flavor.<\/p>\n\n

Again, those that contain little sugar are preferred. In fact, a higher amount of sugar covers the natural taste of the fruit instead of enhancing its flavor.<\/p>\n\n

Finally, choose extra jams and marmalades without additives, substances that are added to hide the significant amount of sugar used and give a “false” fruit flavor.<\/p>\n\n

In short, watch out for the ingredients and lean toward extra homemade jams and preserves that are, most of the time, a guarantee of quality.<\/p>\n\n
